Quattro secoli, un campanile

A charterhouse, then a farm, then fifty years of silence, then a kitchen. The bell is the only one who stayed through all four lives of this house.

Chronicle

  1. 1642 — 1802

    La Certosa

Carthusian monks raise the charterhouse at 780 metres, above the malaria and the noise of the valley roads. They cut a crypt into the tufo, wall a garden against the wind, hang a bell, and keep one rule for a century and a half: silence, except the hours. Napoleon’s suppression empties the cells in 1802.

  2. 1815 — 1969

    La Cascina

The Aimone family farms the ruin for five generations — hay in the chapter house, hazelnuts drying in the cloister, wine and oil in the crypt because it never warms. What the monks built for prayer turns out to be built equally well for agriculture. The bell now rings for weather.

  3. 1970 — 2018

    Il Silenzio

The farm empties downhill like everything else in these decades. Brambles take the garden; the roof gives over the refectory; the fog comes and goes for fifty years with nobody above it. The bell hangs mute — but hangs.

  4. 2018 — oggi

    Il Ritorno

Cecilia and Pietro Bosco — a chef and a cellar man, sister and brother, from Dogliani on the opposite ridge — buy the certosa with Studio Traversa of Torino at the table. Four years of restoration: the vaults consolidated, the garden walls closed, the bell recast from its own bronze. On 21 September 2022, the equinox, dinner is served again on the hill. Michele Aimone, grandson of the last farmers, returns as gardener — the family that kept the house alive now keeps its garden.

Le mani

The hands of the house

  • Sigil of the chef: bell and ladle

    Cecilia Bosco

    Chef & patron

Dogliani, 1987. A decade in kitchens from Paris to Copenhagen; home with one idea — cook the hour.

  • Sigil of the cellar: key and bottle

    Pietro Bosco

    Cantiniere

Keeper of the crypt’s 26,000 bottles and of the house rule: the wine follows the hour, not the dish.

  • Sigil of the maître: candle and folded linen

    Agnese Marengo

    Maître de maison

Runs the room like an office of hours — twenty-two guests, one rhythm, no visible effort.

  • Sigil of the gardener: spade and bee

    Michele Aimone

    Ortolano

Grandson of the cascina. Tends the walled garden, the hives, and the memory of the place.

  • Sigil of the pastry: whisk and star

    Elia Fontana

    Pasticciere

Reads the hazelnut seven ways and closes every evening with the quietest course of the day.

  • Sigil of the sous-chef: knife and sprig

    Amara Diallo

    Sous-chef

The kitchen’s second bell — when Cecilia composes, Amara keeps the thirteen tolls on time.

A brigade of thirty-one, for twenty-two covers. The arithmetic is the point.
