Raviolo del plin, brodo di fieno maggengo
Hand-pinched plin of the three roasts; June-hay broth poured at the table.
Alta Langa · Piemonte · 780 m
Above the fog, evening becomes dinner — a three-star table in a charterhouse of 1642, twenty-two covers, one seating, thirteen tolls of the bell.
“Cuciniamo l’ora, non soltanto il luogo.”
Every clear evening of summer, the valley below fills like a slow white tide. The vineyards drown first, then the roads, then the lights of the villages — until only the ridges and this bell tower remain. The monks who built the charterhouse in 1642 chose the height for silence. We keep it for the hour: dinner here begins in daylight, crosses the dusk, and ends by candle.
Vespro is the office sung at sunset — the hinge between day and night. The kitchen keeps its rhythm: thirteen passages, thirteen tolls.
What the hour asks is what the kitchen serves — hay cut on the June meadows, plin sealed by hand in the afternoon, a porcino baked in the wax of the cloister hives, hazelnuts read seven ways after dark. Nothing on the table is far from the door; nothing on the plate pretends another season.
La discesa della sera
18:30
A cold infusion of the walled garden, drunk standing between the box hedges, while the first fog reaches the vineyards below.
19:30
The bell marks the first passage. Twenty-two covers under the chapter-house vault; the menu follows the light down.
21:15
Mountain-pasture cheeses, chestnut honey from the hives, cugnà. Below the floor, nine metres down, Pietro draws the evening’s last bottles from the crypt.
22:40
The Tonda Gentile closes the office of hours: seven textures, gianduia poured at the table, the room now entirely candlelit.
23:30
Tisana of the garden, baci di dama, the last candle carried out. After the thirteenth toll, silence.

L’Orto murato
Four hundred years of herb terraces, twelve months on one wheel — and the hives whose wax bakes passage eight.
Le Celle
The monks’ quarters, five suites named for what each window sees. Morning is the valley, white and silent.
